It seems like not a lot of people are really looking at QBs free agent wise, which kind of makes sense since you can only max 1 per week...

Not really. Top QBs can average close to 30 PPG. Top RBs and WRs only around 15-18. So if the QB you drafted is only scoring 20 PPG and you think Vick can be closer to 30, then it's well worth the upgrade, even though you only start one.
