I really need a third WR to step up but I have some some top tier talent at a couple spots that I hope makes up for it.

What do you think. Only spot im not excited about is TE. Pretty good team. I like Moss, Burleson and Knox more as WR3s/flexes (but one of them will be your WR2). And you're right about TE: you'll be losing 50-100 points to others there.

Average RBs and a little weak at flex. I'm not sure your QB will be elite enough to, along with your WRs, make up the difference?

Middle of the pack, IMO.
